Easy Shortbread Cookies Recipe

Today I want to share our family’s favorite shortbread cookies recipe. Why do we love it? Because the cookies or pies made with this recipe are:

  • great for any holiday or occasion
  • easy and fun to make with kids
  • are made with few essential ingredients easy to find at any kitchen
  • can be customized in so many ways (see the end of this post for few ideas)

350 g ( US 2 3/4 cups ) of all-purpose flour

120 g (US  ½ cup) of powdered sugar (you can grind any sugar you usually use)

200 g (US 7/8 cup) of butter (cold, cut into pieces)

5 g (1 tsp) of baking powder

5 g (1 tsp) of vanilla extract

1 egg and 1 yolk

Note: if you use vanilla baking powder, do not add vanilla extract


I recommend kneading the dough by hand, not in the food processor for best results. Preheat oven to 180 C // 160 C Fan //Gas 3 and cover the baking tray with baking paper.

  • In a large bowl mix the flour, powdered sugar, dry yeast.
  • Scatter the pieces of butter and pulse to form small clumps of dough.
  • Add the egg and yolk to the dough and vanilla extract. Gently gather in a clump of dough. Wrap in plastic and put it in the fridge for 1 hour.
  • Take the dough out of the fridge and place it on the working surface dusted with flour. Roll it out to about 5 mm // ¼in thick. Using a knife or a cookie-cutter to form the desired shapes.
  • Transfer the cookies onto the baking tray and bake for 13–15 minutes, or until pale golden-brown.
  • Transfer the cookies to cool and dust with powdered sugar to serve.

Toppings and how you can customize the cookies

Using this recipe, you can make a lot of types of cookies or a pie crust. Here are some of our family favorites.

  • Chocolate cookies: simply add 50 g (US 1/2 cup) of cocoa powder.
  • Dip them in the melted chocolate and sprinkle with chopped and toasted nuts or other desired toppings.
  • Add Nutella or jam, if you wish you can even make them double.

  • Use the recipe of the dough for a pie crust! It will be perfect for pies 24 cm in diameter.

Usually, I make two types of pies using this dough recipe: famous Italian “Crostata” with jam or with custard cream and fresh fruits (like in the picture above).
