Easy Cheesecake Recipe with Two Frosting Options

Cheesecake is one of my favorite summer desserts – fresh, light, and easy to make. Our family favorites are two versions of the basic recipe that I want to share with you today.

  • 180 g of cookies
  • 80 g of butter


  • 1 lemon zest 
  • 150 g of sugar
  • 350 g of ricotta cheese
  • 200 of white natural yogurt (Greek yogurt works best)
  • 100 g of fresh cream
  • 3 eggs 
  • 40 g of fresh lemon juice


  • dark chocolate bar
  • 3-4 tablespoons of milk
  • pinch of butter (10g)
  • nuts and fresh berries for decor


  • 4 g of gelatine
  • 400 g of fresh berries
  • 100 g of sugar
  • 40 g of fresh lemon juice



  1. Crush the cookies and combine crumbs with softened butter.
  2. Prepare the baking form 24 cm in diameter: spread the butter and sprinkle with crumbs of crushed cookies or bread crumbs.
  3. Put in the freezer for 30 minutes.
  4. Prepare the filling: pulverize sugar and lemon zest.
  5. In a large bowl combine sugar mix with ricotta cheese, yogurt and cream. Add eggs and fresh lemon juice.
  6. Pour the cheese on the cookies crust.
  7. Bake in the oven: temperature 160°C for 20 minutes and on 180°C another 20 minutes.


There are two frosting options for this cake: chocolate and berries frosting.

Berries Frosting

  • Melt gelatine in cool water.
  • In the sauce pan combine cleaned freshed berries, sugar and lemon juice. Cook for 7 minutes on slow flame (70°C).
  • Add gelatine. Stir well.
  • Pour the berries jelly above the warm cheesecake and decorate with few fresh berries on the top.
  • Leave in the fridge for few hours to cool down before serving.

Chocolate Frosting

  • In the sauce put on bain-marie the dark chocolate.
  • Add to the chocolate milk and butter, stir time to time to combine well.
  • When the chocolate melts, pour it on the warm cake.
  • Sprinkle toasted nuts on the chocolate glaze and decorate the top with fresh berries.

Leave the cake to cool down before serving. Bon appetite!
